The challenge? How could I put some fun into dinner at my house?

You see I have not just my Superman of a husband but also 4 grown kids and 2 tots (5&8).

See what I’m up against? (grin and sigh)

So here’s what I did.

I took Flour tortillas warmed,and diced cooked chicken (cooked with the Old ElPaso taco mix) ,a nice tomato and cilantro salsa ,tortilla chips and 1 can each of black beans and corn. Set them all out in the trays along with some shredded cheese and it was game on! Which was awesome because there really was a game on. (The Green Bay Packers) (Go Green Bay!) .

Ok,  I just lost track…Where was I? Oh,The taco night!

It rocked. Every one got to make their own  creation and it brought us all together.We ate, laughed , cheered and ate some more.

I can honestly say I’ve never seen so many people in cheese heads scarf tacos that fast!

Best of all (budget wise) I fed my whole crew for about $15.00!

So any how,We had the three older kids home tonight and decided to do something  fun for dinner.

I know! Say I( knowing its 80 degrees outside and not wanting to slave over a hot stove) (I am no momma’s fool).

I already have a bag of  meatballs in the freezer from my last Tromp (yes I mean Tromp) to the Grocery.

So I whip out my 101 Things To Do with Meatballs book and find BBQ meatballs! Easy peasy! This I can do!

What are those you ask? Just yummy warm nuggets of fresh bread stuffed with mozzarella cheese!

A small fruit cup for each, some cups of marinara sauce for dipping and poof! Still time to catch NCIS on USA!

So what am I getting at?

Putting fun back into eating.

With picky eaters in our house, we went with the Popcorn Chicken Any’tizers.  The pieces of chicken were just the right size – not to small so that they end up all crunchy, and not too big that you can’t pop-them in your mouth.

The Any’tizers were really easy to prepare and cooked pretty quickly.  Just put the oven on 400°F and cook  for 10 to 12 minutes, turning the chicken pieces over halfway through heating time. That’s it. Pick out a veggie and a fruit and you are good to go!
